Ingredients
4 cups water
4 cinnamon sticks
4 whole cloves
4 whole allspice berries
1/4 cup piloncillo or brown sugar

Directions
In a medium saucepan, combine the water, cinnamon sticks, cloves, allspice berries, and piloncillo or brown sugar. Bring the mixture to a boil over high heat, stirring occasionally.
Reduce the heat to low and let the mixture simmer for 5-7 minutes, stirring occasionally, until the piloncillo or brown sugar has completely dissolved and the spices have infused the liquid.
Remove the saucepan from the heat and let it cool for a minute or two.
Add the ground coffee to the saucepan and stir well to combine. Let the mixture steep for 5-7 minutes, stirring occasionally.
Strain the coffee through a fine-mesh sieve into a serving pitcher or individual cups.
Serve the Café de Olla hot, garnished with a cinnamon stick if desired.
Recipe Note
