In a medium saucepan, combine the water, cinnamon sticks, cloves, allspice berries, and piloncillo or brown sugar. Bring the mixture to a boil over high heat, stirring occasionally.
Reduce the heat to low and let the mixture simmer for 5-7 minutes, stirring occasionally, until the piloncillo or brown sugar has completely dissolved and the spices have infused the liquid.
Remove the saucepan from the heat and let it cool for a minute or two.
Add the ground coffee to the saucepan and stir well to combine. Let the mixture steep for 5-7 minutes, stirring occasionally.
Strain the coffee through a fine-mesh sieve into a serving pitcher or individual cups.
Serve the Café de Olla hot, garnished with a cinnamon stick if desired.
If you prefer a stronger coffee flavor, you can add more coffee to the mixture. You can also adjust the sweetness and spiciness to your liking by adding more or less piloncillo or spices. Enjoy your delicious Café de Olla!
